Figured this out after about my third attempt...
2 tbsp baking powder
2 tbsp oil
2 tsp corn syrup
1/2 c Jules Gluten Free All Purpose Flour
3/4 c soy flour
3/4 c oat flour
1/4 tsp salt
2/3 c milk or 1/3 c condensed milk and 1/3 c water
Italian seasoning/garlic salt to taste
Preheat oven at 425 and spray/grease pizza pan.
Combine ingredients (dry first, then wet) and when mixed well, wet hand and spread into a pizza pan (I'd say it makes a medium pizza).
Bake for 8-10 minutes until crust is golden brown. Put a little oil on the crust (to prevent soaking from sauce) and add toppings.
Bake for another 5-7 minutes until cheese is melted.
This is really, really good crust. Not doughy or crunchy, but good. I'd even recommend it for dessert pizzas too since it has a sweet twang to it.
